Autumnal stew with dates

A lot of fresh vegetables and fruits are ready to be harvested and prepared. Chili peppers, eggplants, zucchini, pumpkins, chard, and beets are staples on our plates every day. Since time is often short for elaborate dishes, I have a very quick and delicious recipe for you.
You need:
- 250g each of fennel, pumpkin, zucchini, aubergine, tomatoes
- 200g of mushrooms of your choice
- 1-2 cloves of garlic, quartered
- 1 onion, quartered
- 1 bell pepper, quartered
- 1 chili pepper, finely chopped
- 4 dates, natural & quartered
- 1 sprig of rosemary
- 1 tbsp date syrup
- 2 tablespoons olive oil or coconut oil
- Spices of your choice, salt, pepper, balsamic vinegar
