It's especially cold today, so I thought I'd make myself a cozy winter breakfast. Especially when it's cold and dreary outside, we love to snuggle up on the couch and indulge in some delicious treats. This recipe is my absolute favorite among my collection of simple yet brilliant recipes. It's free of refined sugar and vegan. I also use this pudding in a slightly thinner form as a sauce for cakes, muffins, or strudel.

RECIPE: COCOA-CASHEW-DATE PUDDING

VEGAN & FREE FROM REFINED SUGAR

NO GRANULATED SUGAR VEGAN

You need

a handful of cashews (soaked)
DATTELBÄR Date syrup according to taste
2 bananas
Chopped DATTELBÄR dates (Grade 3 soft)
Berries
natural flavors, vanilla, peanut, ...
1 pinch of Bourbon vanilla powder

Here's how:

Chop the dates into small pieces.
Put bananas, cashews, flavorings, vanilla, date syrup and a little water into the blender and blend until the mixture is smooth and creamy.
Mix with date pieces and berries, and decorate with blossoms, cashews and cinnamon.

This sauce goes perfectly with cakes, strudels, and the like.
