Pumpkin Spice Cookies

The DATTELBÄR (Date Bear) has given his favorite cookies a taste of autumn! Namely, vibrant pumpkin and delicious pumpkin spice. For everyone who loves pumpkin and autumnal spices as much as the BEAR does, these cookies are the perfect snack!

You will need:
- 100g of nuts of your choice
- 100g organic seedless Sukkary dates or 100g date paste
- 120 g rolled oats
- 50 g Hokkaido pumpkin
- 1 tbsp organic date syrup
- 1/2 tsp cinnamon
- 2 pinches of allspice
- 1 pinch of nutmeg
- 2 pinches of ground ginger
And here's how it works:
- For the pumpkin puree, preheat the oven to 200°C (390°F). Wash the pumpkin, quarter it, and scoop out the seeds and pulp with a spoon. Place the pumpkin pieces on a baking sheet lined with parchment paper. Bake for approximately 25–40 minutes (depending on size) until soft.
- Then mash the pumpkin with a fork. The puree shouldn't be too smooth.
- Place all ingredients except the pumpkin puree in a food processor and blend until no large pieces remain. Then mix in 50g of pumpkin puree. Refrigerate the mixture for 20 minutes. With damp hands, shape the date and pumpkin mixture into small cookies. Let the finished cookies chill in the refrigerator for 5 hours, or preferably overnight.
