Vegan Coconut Peanut Bites

These tasty bites are easy to make and are perfect as a healthy snack!

You will need:

  • 20 x 15 cm shape
  • High-performance blender or immersion blender

For the floor:

  • 250g dates
  • 100g almond flour
  • 20g cocoa nibs (optional)

For the coconut-peanut layer:

  • 3 tbsp peanut butter
  • 1 1/2 tsp agave syrup or date syrup (this will make the bites a little darker)
  • 1 tbsp coconut oil
  • 110g coconut milk (solid part of a can)
  • 110g coconut flakes

And here's how it works:

  1. First, prepare the base. Soak the dates in water for about 1 hour and blend them with the remaining ingredients in a high-performance blender (or immersion blender) until you have a homogeneous mixture.
  2. Line the tin with baking paper, spread the date mixture evenly in the tin and press it down. Then chill in the refrigerator.
  3. For the coconut-peanut layer, melt the coconut oil and let it cool.
  4. Now mix all the ingredients together, spread them over the date base, and smooth the surface. Chill the pan for 1-2 hours, then remove the parchment paper and cut into small bites or bars.
