Vegan Coconut Peanut Bites

These tasty bites are easy to make and are perfect as a healthy snack!

You will need:
- 20 x 15 cm shape
- High-performance blender or immersion blender
For the floor:
- 250g dates
- 100g almond flour
- 20g cocoa nibs (optional)
For the coconut-peanut layer:
- 3 tbsp peanut butter
- 1 1/2 tsp agave syrup or date syrup (this will make the bites a little darker)
- 1 tbsp coconut oil
- 110g coconut milk (solid part of a can)
- 110g coconut flakes
And here's how it works:
- First, prepare the base. Soak the dates in water for about 1 hour and blend them with the remaining ingredients in a high-performance blender (or immersion blender) until you have a homogeneous mixture.
- Line the tin with baking paper, spread the date mixture evenly in the tin and press it down. Then chill in the refrigerator.
- For the coconut-peanut layer, melt the coconut oil and let it cool.
- Now mix all the ingredients together, spread them over the date base, and smooth the surface. Chill the pan for 1-2 hours, then remove the parchment paper and cut into small bites or bars.
