Who wouldn't want to grab some right away? Our sweet DATTELBÄR fan Sarina conjured up these raw carrot bites from our dates. :-))

What you need for this

For the floor:

  • 70g raw buckwheat

  • 70g ground oats (or buckwheat flour)

  • 2 medium-sized carrots (approx. 150 g), peeled and grated

  • 1 tsp cinnamon

  • 1 tsp ground ginger

  • ½ tsp ground cloves

  • 1 tsp vanilla extract

  • 100g date paste

  • 20g almond butter


    For the frosting:

    • 50g raw almonds, soaked overnight

    • 2 tsp date syrup

    • 1 tbsp orange juice

    • 1 tsp vanilla extract

    • Peel of 1 organic orange


      preparation

      1. Add the date paste, grated carrots, buckwheat, oat flour, vanilla, and almond butter to the blender and mix until a sticky dough is formed.

      2. Press the mixture into a baking tray lined with parchment paper and leave to rest in the freezer for 2 hours.

      3. Meanwhile, prepare the frosting. To do this, blend the almonds with the date syrup, vanilla, and orange juice until a creamy mixture is formed.

      4. Cut the dough into pieces, spread with frosting and sprinkle with grated orange zest.
