Raw carrot bites with almond frosting

What you need for this
For the floor:

70g raw buckwheat
-
70g ground oats (or buckwheat flour)

2 medium-sized carrots (approx. 150 g), peeled and grated
-
1 tsp cinnamon
-
1 tsp ground ginger
-
½ tsp ground cloves
-
1 tsp vanilla extract
-
100g date paste
-
20g almond butter
For the frosting:
-
50g raw almonds, soaked overnight
-
2 tsp date syrup
-
1 tbsp orange juice
-
1 tsp vanilla extract
-
Peel of 1 organic orange
preparation

Add the date paste, grated carrots, buckwheat, oat flour, vanilla, and almond butter to the blender and mix until a sticky dough is formed.

Press the mixture into a baking tray lined with parchment paper and leave to rest in the freezer for 2 hours.

Meanwhile, prepare the frosting. To do this, blend the almonds with the date syrup, vanilla, and orange juice until a creamy mixture is formed.

Cut the dough into pieces, spread with frosting and sprinkle with grated orange zest.
