Sweet potato and date cake

Oh, how delicious are the organic Medjool dates for this recipe? They're so soft and practically melt in your mouth! Ohh yes! :-))

You need:

For the floor:

  • 4 Medjool dates
  • 230g soft-cooked sweet potatoes
  • 100 g ground almonds or nuts
  • 2 tbsp baking cocoa

For the cream:

  • 1 small cup of vegan yogurt
  • 1 tsp psyllium husks and
  • 100g berries

And here's how it works:

  1. Preheat the oven to 160 degrees Celsius (convection setting).
  2. Put all the ingredients in a mixer and bake the dough for about 30 minutes. Let the cake base cool completely.
  3. While the dough is in the oven, mix the yogurt, psyllium husks and berries in a bowl and let the cream soak in the refrigerator.
  4. Spread the cream onto the cooled cake base and ta-da! :-)
