Vegan and sugar-free date-peanut-oat bar

Well, do you fancy a delicious and crunchy snack? And vegan and sugar-free too? Then this tasty date-peanut-oat bar is just the thing for you!

Ingredients for 12 pieces:
100 g oat flakes
50 g roasted sesame seeds
10 dates
100 ml oat milk
2 teaspoons peanut butter
1 teaspoon oil
about 20 g roasted peanuts
a good pinch of salt
pinch of cinnamon
dark chocolate
And here's how it works:
First of all, pour hot water over the dates and let them soak. For the bottom layer, grind the oat flakes and sesame seeds in a blender to form "flour", add oil, oat milk, salt and cinnamon, knead into a dough and press into a baking dish lined with baking paper. In the meantime, put the whole thing in the freezer.
The Remove the dates from the water and puree/blend with the peanut butter. Add a little of the date water until a paste forms.
Chop the peanuts into small pieces and stir them into the date mixture with a good pinch of salt. Place the date caramel layer on the oat layer and freeze both again for approx. 1 hour.
Then melt the chocolate , cut the cold mixture into bars and cover with chocolate . Sprinkle a little salt on top for decoration - and you're done :-)
