Hmm, the apple harvest is almost over. We've stored a lot of apples in our root cellar for the winter this year. They taste best fresh, though, so we're enjoying lots of apple dishes.
Apples are a welcome, low-calorie snack, especially in autumn. They contain folic acid and plenty of vitamin C. Apples also contain health-promoting minerals such as potassium, iron, and magnesium. Their digestive benefits come from their high fiber content in the form of cellulose and pectin.

Baked Apple with Dates
VEGAN & FREE FROM REFINED SUGAR
For one apple you need:
- 1 large apple
- 1 tbsp whole almonds
- 1 tbsp coconut oil
- 1 tbsp grated walnuts or other nuts
- 50g DATTELBÄR dates (class 3 soft) or date paste
- 1 tbsp date syrup
- Cinnamon, cardamom, cloves, ground
- vanilla powder
- Lemon zest
Here's how:
- Wash and hollow out the apple, then insert the whole almonds into the outside.
- Melt the coconut oil and knead it together with the dates, walnuts, date syrup, and spices.
- Fill the hollowed-out apple with the mixture and bake in the oven at approximately 180°C for 20 minutes.
- Baked apples taste best when served with vegan vanilla ice cream or vanilla pudding.
