Christmas gingerbread cookies for healthy sweet tooths!

Do you fancy healthy and moist gingerbread cookies during the Christmas season?
Then this wonderful recipe is just right for you!

You will need:
For the cookies:
100 g (ground) hazelnuts
150 g oat/einkorn flour
1 1/2 tsp cream of tartar baking powder
1 tsp gingerbread spice
pinch of cinnamon
25 g coconut oil
50 g date paste
80 g applesauce
1 tsp lemon juice
Optional: 1-2 tbsp date syrup
Optional: For the glaze, dark chocolate
or: 2 tablespoons of coconut oil - 2 tbsp date syrup - 1 tbsp raw cacao powder.
Here's how it's done:
Gently toast the ground hazelnuts in a dry pan. Combine all the dry ingredients. Mix the date paste, applesauce, and lemon juice. Melt the coconut oil and add it to the date-applesauce mixture. Combine the dry and wet ingredients and knead everything into a ball of dough. Chill. Roll out the dough, cut out gingerbread shapes, decorate with nuts, and bake at 180°C (350°F) for 10 minutes. Let cool on a wire rack. For the glaze, gently warm all the ingredients and mix them together. Coat the cookies.
