This delicious carrot bread, made with buckwheat flour and lots of seeds, tastes great even without any spread. It's super healthy and very easy to prepare.

What you need:

  • 250 g buckwheat flour
  • 150 g rolled oats
  • 100g carrots
  • 80 g sunflower seeds
  • 30 g ground flaxseed
  • 50 g walnuts, finely chopped
  • 2 Medjool dates
  • 1 pack of cream of tartar packing powder
  • 1 tbsp apple cider vinegar
  • ½ L of carbonated mineral water
  • Coconut oil for the mold

Spices:

  • 3 tsp salt
  • 2 tsp caraway seeds
  • 2 tsp cumin
  • 2 tsp fennel
  • 1 tsp anise
  • 1 tsp rosemary

And here's how it works:

First, grease a loaf pan with coconut oil. Then grate the carrots, finely chop the dates, and combine all the ingredients, stirring briefly. Pour the batter into the pan and sprinkle the top of the bread with sesame seeds. Place the pan in a cold oven and then set the oven to 180°C (350°F) using the convection setting. After 1 hour, turn off the oven and leave the bread in the residual heat for 15 minutes. Turn the bread out of the pan onto a paper towel and let it cool slightly.
