CRISPY COOKIES WITH DATES

VEGAN AND FREE FROM REFINED SUGAR

Ingredients:


160g DATTELBÄR date syrup or raw cane sugar
100g almond milk
100g peanut butter, creamy
200g organic spelt flour
2.5g baking powder
80g DATTELBÄR dates (quality: SOFT) , chopped

  • Preheat the oven to 180°C

  • Chop the dates into small cubes

  • Put milk and DATTELBÄR date syrup in a bowl and stir into a fine mixture.

  • Add the peanut butter and stir well.

  • Sift the spelt flour and baking powder into the liquid mixture and mix. (Be careful not to overdo it or the cookies will taste like rubber.)

  • Add the date pieces

  • Now portion the mixture (approx. 40g) onto a greased baking tray or baking paper. Make sure that you leave enough space between the cookies.

  • Now leave them in the oven for 12-14 minutes. The longer you leave them in, the crispier they will be. Rotate the tray halfway through.

  • If you like flat cookies, press them together with an object while they are still warm.
