If you're wondering if there's a way to make crispy and heavenly delicious cookies - without using eggs, sugar and butter - then the answer is YES!
This recipe is one of a kind, it is very easy to make and we love it.

CRISPY COOKIES WITH DATES
VEGAN AND FREE FROM REFINED SUGAR
Ingredients:
160g DATTELBÄR date syrup or raw cane sugar
100g almond milk
100g peanut butter, creamy
200g organic spelt flour
2.5g baking powder
80g DATTELBÄR dates (quality: SOFT) , chopped

Preheat the oven to 180°C

Chop the dates into small cubes

Put milk and DATTELBÄR date syrup in a bowl and stir into a fine mixture.

Add the peanut butter and stir well.

Sift the spelt flour and baking powder into the liquid mixture and mix. (Be careful not to overdo it or the cookies will taste like rubber.)

Add the date pieces

Now portion the mixture (approx. 40g) onto a greased baking tray or baking paper. Make sure that you leave enough space between the cookies.

Now leave them in the oven for 12-14 minutes. The longer you leave them in, the crispier they will be. Rotate the tray halfway through.

If you like flat cookies, press them together with an object while they are still warm.
