Almond milk - sugar-free and vegan

Sweetened with dates & free from refined sugar

You need:

  • 100g almonds
  • 1 liter of cold water
  • 3 pitted dates

Here's how:

  1. Place the almonds in a container and cover them with water.
  2. Leave them in the refrigerator for four to eight hours. During this time, the bitter substances from the skin will leach into the water and the almonds will soften.
  3. Soak the dates in warm water for 1 hour, then drain them.
  4. Mix them together with the water and dates for about one minute.
  5. Strain the solids through a nut milk bag or a wet dish towel.
  6. You can use the pomace for dressings, cookies, bread or desserts.
  7. Pour the milk into a container and store it in the refrigerator for 2-4 days. Shake the container before use to loosen any solids.
