Almond milk - sugar-free and vegan

Sweetened with dates & free from refined sugar
You need:
- 100g almonds
- 1 liter of cold water
- 3 pitted dates
Here's how:
- Place the almonds in a container and cover them with water.
- Leave them in the refrigerator for four to eight hours. During this time, the bitter substances from the skin will leach into the water and the almonds will soften.
- Soak the dates in warm water for 1 hour, then drain them.
- Mix them together with the water and dates for about one minute.
- Strain the solids through a nut milk bag or a wet dish towel.
- You can use the pomace for dressings, cookies, bread or desserts.
- Pour the milk into a container and store it in the refrigerator for 2-4 days. Shake the container before use to loosen any solids.
