Sweet potato brownies

Is there anything better than healthy brownies? Sweet potatoes make them especially soft and fudgy :-))


What you need:

  • 3 cooked sweet potatoes (approx. 900g)
  • 9 tablespoons of cocoa (100g)
  • 100g Sukkary dates
  • 100 g coconut flour
  • 100 g grated walnuts
  • 1 tbsp coconut butter
  • ½ tbsp coconut oil

And here's how it works:

  1. Mix or puree everything in a mixer, spread onto a baking sheet (lined with baking paper) (approx. 1-2 cm thick) and bake for 30 minutes at 180 degrees using top and bottom heat.
  2. Check on your brownies after 30 minutes. After 30 minutes, turn the oven up to 150°C and bake for another 10 minutes.
  3. Then turn off the oven and let the brownies cool down inside.
  4. For the glaze, heat 3 tbsp coconut oil, 4 tbsp cocoa, 3 tbsp date syrup, a pinch of salt and a little cinnamon in a pot and pour over the brownies.
  5. Enjoy :-))
